Green Pasta Dough
This is made with spinach or beet, when you cook your spinach you will lose more than half of its weight, so you need 300 g raw spinach to yield 100 g of cooked squeezed spinach.
You will Need for 4 people
300 g spinach/beet
400 g plain flour
Wash spinach and remove the white stems. Boil the spinach for 4 to 5 minutes, drain and plunge into iced water to stop it cooking further and to preserve its wonderful green colour.
As soon as the spinach is cool enough to handle, squeeze out as much of the water as possible.
Puree the spinach in a blender with the eggs. Work this mixture into the flour (see Basic Pasta Dough Recipe).
