Herb Pasta Dough
This is a delightful pasta to make as it can be made with so many different herbs.
The exact quantity of herbs is your choice taking into account the strength of flavour of each one – example; I would be more generous with parsley than with strongly scented rosemary. It is important to pick all the leaves from the stems and chop the leaves very finely.
1 or 2 handfuls of chopped herbs (parsley, sage, mint, thyme or whatever you like)
400 g flour
Simply add the finely chopped herbs into the eggs and then work the mixture into the flour as described in the Basic Pasta Dough Recipe
(see Basic Pasta Dough Recipe).
