Making Pumpkin Pasta for 4 people.
Like all coloured pastas, this has the beautiful colouring and flavours.
Ingredients for 4
400 g pumpkin, skin on, seeds removed and cut into wedges
2 eggs
400g plain flour
Preheat the oven to 250 degrees C
Place the pumpkin wedges in a bowl and mix with just enough oil to coat them. Season with salt and pepper. Roast, turning once, for 20 minutes or until tender.
When the pumpkin is cool, scrape the flesh from the skins, then puree in a blender and add to the eggs. Work this mixture into the flour as per Basic Pasta Dough.
